Bottarga is the real treasure of the gulf coast. Naturally, bottarga is an amber gold caviar made from the roe of striped mullet. Our bottarga is salt cured and air dried over a period of time using ancient methods with modern techniques. This very special fish is indigenous to Florida and has played a role in Florida’s history.Our bottarga is sourced by local fisherman, which we maintain a personal relationship with. We fish side by side with a fleet of local boats that catch and sell their fish the same day that they are caught. From there, they are roed by hand at a HACCP certified facility. The Roe is then hand selected while the fish are processed separately. THERE IS NO WASTE. This proven sustainable fishery has grown stronger over the centuries.
