Our bottarga is salt cured and air dried over a period of time using ancient methods with modern techniques. This very special fish is indigenous to Florida and has played a role in Florida’s history.Our bottarga is sourced by local fisherman, which we maintain a personal relationship with. We fish side by side with a fleet of local boats that catch and sell their fish the same day that they are caught. From there, they are roed by hand at a HACCP certified facility. The Roe is then hand selected while the fish are processed separately. THERE IS NO WASTE. This proven sustainable fishery has grown stronger over the centuries.
