The Torchon of Foie Gras is the ultimate cold preparation. Translating to “Towel” in French, its name is a result of the preparation method where the Foie Gras was traditionally tied in a kitchen towel, rolled, poached, and hung to chill for several days.
Cornfed Moulard ducks produce large, silky foie gras. Weight of product will not be less than 1.5 lbs and may be up to 15% larger. Duck Foie Gras is ideal for roasting, braising, searing or preparing terrines.
